FarmerΓÇÖs cheese is a drier relative of cottage cheese. These blintzes are delicious accompanied with mixed berries or a warm dried fruit compote or with thick slices of bacon or ham.
Combine in a blender or food processor until smooth:
Spoon the filling in the center of the uncooked side of:

Fold the sides of each blintz around the filling to form a rectangular package. (At this point, the filled blintzes can be wrapped airtight and frozen for up to 1 month.) In a large skillet, preferably nonstick, heat over medium heat:
2 tablespoons unsalted butter
1 tablespoon vegetable oil
When the butter is melted and the bubbles subside, add the blintzes, seam side down, and cook until golden brown on both sides. Transfer the blintzes to paper towels to drain for a moment. Serve immediately with:
Sour cream (optional)
and any other topping or accompaniment of your choice.
